Brazil is a vast melting pot of geography and cultures.
In a country as large as Brazil, each region has produced its own culinary styles. Ceara State in north-east Brazil, and the nearby State of Bahia, is a dry, hot semi-arid region lying just below the equator.
Inland areas are drought stricken and dominated by large cattle ranches. As a result, beef is a firm favourite.
Over time, the farmers of Ceará developed a method to preserve meat before the time of refrigerators. The meat was cut and hung on lines exposed to the sun. The dried preserved meat, called carne de sol (meat of sun), is still popular today.
