Churrasco is the Brazilian version of a barbeque meat feast: meat cooked on skewers on a burning wood or coal fire.
This style of cooking originated in the southern States Brazil where the gaúchos (cowboys) would spend days and weeks away from home. On the trail they would have to cook their meat on skewers over a fire.
Many Brazilian families still cook their churrasco at home on a traditional grill with supports for spits or skewers, where the meat is placed.
Favourite ingredients for a typical Brazilian churrasco would include fraldinha (bottom sirloin meat cut), picanha (rump cover meat cut), chicken heart, sausages, bread with garlic sauce, and chicken legs
These days restaurants have evolved to specialise in this type of cooking. Called a churrascaria, the restaurant provides an all-you-can-eat serving of a choice of meats.
The Churrascaria works on a system called rodízio (rotation) – with waiters continuously circling around the tables serving the different cuts of meat.
