Seychelles Cusine... coconut biscuits
I am dreaming of some Coconut Biscuits- hence I plan to make you want some as well. Enjoy the baking...
Ingredients
160gr Sugar
2 eggs
125gr Coconut (pulp)
Prepare the biscuits:
1.Remove the coconut from the shell, remove the black part, wash and grate finely with a hand grater, dry and set aside
2.Separate the eggs whites from the yolks
3.Whisk the sugar and egg yolks together to obtain a frothy mixture
4.Add the pulp of the grated coconut and the egg whites beaten until stiff
5.Mix well with wooden spoon
6.Arrange in small heaps on greased baking tray and bake in a moderate over for 20 -25 minutes.
