Made from the starchy manioc root flour, Tapioca is a word derived from the Tupi language (from tipi oka which refers to the process through which manioc is made edible).

In Brazilian cuisine, tapioca is a dessert made by combining tapioca with shredded coconut.

The tapioca is stirred, drained through a sieve and fried into a tortilla shape. It is then filled with either doce (sweet) or salgada (salty) ingredients, a delicacy you can buy from street vendors in many parts of Brazil.
