Welcome to Clementine Restaurant, Brunswick, Maine, United States. Dana and Nancy met while working at The Back Bay Grill in Portland, Maine, where Dana was the sous chef and Nancy was a server. A mutual love of food and wine grew into a marriage and now a family, with daughter Helen.
Dana's passion for food and cooking started at an early age and directed him to Johnson and Wales University for a degree in the culinary arts. He gained a foundation of culinary theory and since has spent a large part of his life researching and understanding food and dining. The depth of his culinary education came during tenures at several Restaurants in the Portland area: most notably at The Back Bay Grill for four years of full immersion in the art of fine dining under Chef Larry Matthews Jr.
Nancy moved back to Maine after seven years of service in the ultra-fine dining environment of Chanterelle Restaurant in New York City under Chef David Waltuck, his wife Karen and Master Sommelier Roger Dagorn. Chanterelle provided a very polished education in the realm of fine dining with rare and expensive wines and fantastic food. Care of the client was of the utmost importance and Nancy has continued to provide that in Restaurants of every style.
Dana and Nancy were most recently employed by Henry and Marty in Brunswick, Maine. Dana was the chef until April of 2007 when Henry and Marty was sold. Nancy left in October of 2006 in anticipation of the birth of daughter Helen.
It has long been our dream to have a Restaurant of our own to offer an amalgamation of all that we have learned in our respective Restaurant careers. This is the way we like to dine. We present Clementine Restaurant and hope that you are well fed and cared for! Please enjoy!
