Rolando â??Rolyâ? Cruz-Taura, is a successful veteran of the vibrant South Florida Dining scene, a native of Miami whose culinary experience dates back to 1985 when he worked at The Intercontinental Miami (formerly the Pavillion Hotel). Chef Cruz-Taura, went on to receive a Bachelor of Science in Hospitality Management from Florida International University, in 1993.
Rolyâ??s Executive Chef posts in Florida include: time with the historical Hotel Mayfair House,Shulaâ??s on the Beach (Sheraton Yankee Trader), and the prestigious Miami City Club.
Rolyâ??s Consulting Company, RCT Concepts, has been integral in several critical and commercially successful projects including corporate projects with CamFam, Blackwood Canyon Vintners of Washington State, and Kilinkere, Inc.
Roly has had the good fortune of working with several of the countryâ??s foremost Regional Cuisine innovators, Chef Mark Militello (Sous Chef at Markâ??s in the Grove), Chef Allen Susser (Consultant Chef at the Hotel Mayfair House), and nationally renowned Joachim Splichal (Consultant Chef at the Hotel Mayfair House), as his best preparation to present the vision he has with FIFTY a Restaurant & Lounge.
