About Hibernia Restaurant
Hibernia Restaurant was started in 1987 when Raoul Rodriguez and Mary Pat O'Hanlon moved to Anguilla.
Hibernia Restaurant is a small, intimate and elegant Restaurant, with 11 tables set in an open air West Indian house by the sea. Recently, Hibernia Restaurant has added an art gallery as well.
Raoul, who has represented Anguilla on an international level, has formal training from the Ecole Hoteliere of Strasbourg, France, and cooking schools in Laos, Thailand and Hong Kong. He creates French/Asian dishes using either the freshest local seafood or high quality meats imported from the US and France.
