Pizza is a very ancient preparation at La Rocchetta. It was considered a “poor”, simple dish made from ingredients easily available to country folk: flour, oil, salt and yeast. It was sometimes enriched with lard, cheese, basil leaves and pepper, but only for special occasions. The modern Pizza evolved after the Americas were discovered and the tomato was introduced to Italy. The tomato formed a heavenly partnership with mozzarella to create a dish to please even the most discerning palate, such as Queen Margherita, the wife of Umberto I of Italy, who gave her name to the world’s most popular Pizza.
A traditional barbecue, vegetables and meat cooked over red-hot embers always have a very special flavor and create a happy ambiance at La Rocchetta. In Tremosine, food cooked over an open fire has always been a traditional accompaniment to music and dancing at local fêtes.
