At Layback Manor in Rutherglen, Australia we not only have beautiful wines, oils and olive products to try, if you are in need of a coffee and cake or a light lunch we offer these daily. Layback Manor - Well that's a misnomer. Layback Manor began as a "lifestyle" notion ....which started out with planting the vines and olive trees...and creating a hand built Cellar Door using the red clay from the site. We are still waiting for the "layback" part!!....but we would love for you to bring you best laid back manner and sample the treasures of our labour!!
Calico Town has a name referring to the history of Rutherglen, which really began as a Gold Rush town where "buildings" were of calico and canvas!! We have the remains of gold mines, and the last poppet head in North East Victoria stands on our property adjacent to our Cellar Door, overlooking the Vineyard and Olive Grove. Initially we planted Shiraz, the rich and robust wine variety for which Rutherglen is famous. This has been followed with further plantings of other varieties of grapes to expand the range of wines we offer.
Calico Town's debut Vintage from the 2002 harvest has "...balance, intensity of flavour and an impressive structure...." We've had 2 more vintages released since then which shape up as being of the same calibre !! WOW !!!
Rutherglen Shiraz 2002 received the People's Choice Award at Federation Square in 2004.

The Wicked Virgin Olive Grove, sweeping down the hill on the northern aspect of Rutherglen is part of the vista from the hand built, mud brick cellar door.

There is no truth to the notion that Extra Virgin Olive Oil comes from very ugly olives!! Extra Virgin describes Olive Oil which in Australia conforms to very specific standards. The Olives are picked at critical stages of ripeness, processed as soon as possible after harvest and must have free fatty acid levels below 1%. True Extra Virgin Olive Oil is a natural food which has legendary health attributes.
Because we have varietal Extra Virgin Olive Oils, you are able to taste differences and choose an oil that suits your tastes and needs.
Table Olives are picked by hand to avoid bruising and to discard damaged fruit. We cure the olives in a brine for several months to soften their natural bitterness. When ready we hand grade them again before putting them into jars. The variation in colours are natural, as are the flavours and texture of each variety.
We also have an oil pressing facility to support the local growers.
