Interiors are not the whole story, but the ornamentation in the dining room and on the terrace has rejuvenated the best address in the center of town. Claire and Jean-Claude Santioni have added modern notes to the frescos that illustrate the Mediterranean and its mythology, and they have redistributed the tables. It's well known that M. Santioni is not obsessive about the region but easily mixes classic versions with personal interpretations. He's a chef who is never resigned but captures flavors and knows how to work an angle. Langoustine cappuccino with foie gras cream and risotto; pagre filet with baby artichokes; hare tourte and fig compote; peach tatin or white cheese upside down cake and watermelon jelly ... confirm the thesis. Claire, sommelier and wife, shares her passion for the wineries (200 references) as well as foreign labels. The carte is organized geographically and by appellation (Provence from 14 EUR half-bottle), with wines by the glass for 6 EUR. Plus a selection of liqueurs, whiskies, and eaux-de-vie.
