Marco and Debbie DeFanis have taken "Think Italian", which has been their tag line since opening the first Marcoâ??s on Maui in 1992, to a whole new level.
With the completion of their brand new Restaurant on South Kihei Road, itâ??s easy to see that they indeed do "Think Italian."
The architecture is Italian Mediterranean and is simply beautiful. Marco will tell you that while the kitchen has state-of-the-art gadgetry for Chef Hartford Wright to continue to create new menu specials along with Marcoâ??s time-tested old-world favorites, the dining room definitely has old world charm and ambiance right down to the European glassware.
Chef Wright, when asked for a recommendation said, "Itâ??s all good. So if you like beef, the ribeye steak is very tender and juicy and we grill it to perfection, just the way you like it. The Black Angus prime rib melts in your mouth. If you came for fresh fish, then the recommendation is the Opakapaka baked in garlic butter with Italian seasoning and served on a bed of angel hair pasta, which is also excellent. In the seafood category, the cioppino, a wonderful fish stew made with a medley of fresh seafood simmered in a red tomato sauce and also served over angel hair pasta." Just like Chef Hartford Wright said, "itâ??s all good."
To say that Marco and Debbie pay attention to details would be a gross understatement, they are concerned with even the smallest of details because they know that is the difference between good and great. Marco and Debbie wonâ??t ever be satisfied with good, only great will do.
