At Monica Aca Y Alla in Dallas, Texas, we just don't make enchiladas like we use to. An oil-drenched tortilla, over-cooked chicken and powder herbs and spices, maybe some cheese and heavy sour cream - that one's old enchilada. Modern day enchiladas tell a whole different story. Excitement is a premium commodity when it comes to an item with such main street appeal as an enchilada.
Borrowing from the Global Market, La Nueva Cocina it has bolstered its appeal with trendy Asian, Southwestern and even Mediterranean ingredients. Paired with a hearty assortment of interesting greens and garnishes, fresh herbs and spices, steamed or grilled tortillas and new style low-fat cheese, bring us to a contemporary Mexican style food and suddenly an enchilada becomes unique.
La Nueva Cocina could become famous for its simplicity. Most of its innovative dishes demand little more than absolutely fresh (and flavorful) ingredients. Technique, where necessary, play a distinctly secondary role. I also think that these dishes are easily adapted to non-professional kitchens. Without claiming that this is traditional (old-Mexico) homey food, it should fit well in a home.
