The organic menu is a project in its creation stages, an idea of the 5 Terre Park and, on its behalf, guaranteed by the AIAB (Associazione Italiana per l'Agricoltura Biologica). We at the Lanterna are contributing to its realisation since this is exactly in line with the natural tendences which are already part of our way of running our refreshment activities. At the moment, this is a pioneer initiative if only for the enormous difficulty we are up against in obtaining the raw materials. The menu, therefore, is unfortunately only limited. The rigid regulations of the controlling body ICEA, furthermore, does not consider the wild fish taken from the waters of the 5 Terre as being organic; these make up the structure of our company and would render organic 90 percent of our menu. The list below, therefore, looks to the origins of the pasta and the vegetables for their entry into the selection and, as a result, the latter is limited. The Lanterna, however, continues to guarantee the freshness of the seafood we prepare, being fish which has swum freely in the waters of this corner of Liguria.
