Wells-next-the-Sea

Wells is famous for its fish and chips. A local delicacy is samphire or glasswort (salicornia europaea), a fleshy edible plant which grows in the intertidal mudflats and saltmarshes. Samphire is collected by locals and can be seen for sale in the town in summer. The locals boil the samphire, then serve it hot with butter or malt vinegar.
