Solo Bistro, Bath, Maine reflects that spirit, and Will credits his time abroad for exposing him to many of the ideas that drive his vision of the Restaurant. Neilson grew up on the east coast, and then studied and worked in various cities across Europe, in Greece, and in Kenya.
